I believe what you may be seeing is a "hay" belly. If you cut them back on hay to just a small handful per day or alfalfa hay, they will lose most of that belly. Also if they tend to tank up on water then that will make their bellies look larger. You could limit water before the show to help with that. I wouldn't exercise more than you normally would because you can break them down and lose what you want to keep.
